Sausage Pasta Bake

450g pork sausage (works well with spicy ones)
226g pasta
1tbsp oil
1 green & 1 red pepper sliced
1 medium onion chopped
40g butter
40g plain flour
1 pint milk
115g cheddar cheese grated
Salt & Pepper
2 tomatoes sliced
Chopped parsley to garnish

Preheat oven to 190C. Heat oil in frying pan and fry sausages until brown. Cut sausages into 1 inch chunks. Place pasta in large pan of boiling water and cook for the required time. Saute the onions and peppers for 3 mins. Melt the butter in a saucepan, add flour and stir until smooth. Remove from heat and stir in half the milk. Return to heat and stir until thick. Add remaining milk, stirring until the sauce thickens and boils. Add ¾ of the cheese and season. Drain the pasta, return to pan and add sausages, vegetables & sauce. Mix well & place in oven proof dish. Garnish with tomatoes & the remaining cheese and bake for 30 mins.
