Simple Roast Pork Tenderloin with lemon & garlic

2 Pork Tenderloins
Grated rind & juice of 2 lemons
6 tbsp chopped fresh parsley
12 garlic cloves blanched
Salt & pepper
2 bay leaves
2 tbsp oil

Blanch the garlic cloves in boiling water for a few minutes. Slice the pork lengthways without cutting right through. Open each piece out and fold flat. Sprinkle over the grated lemon rind & parsley. Lay the blanched garlic cloves along the middle of each tenderloin and season with salt & pepper. Fold the tenderloins back together and tie with string at 1 inch intervals. Put in a porcelain dish with the bay leaves, pour over the lemon juice, cover and leave to marinate overnight in the fridge. The following day preheat the oven to 200C. Remove the pork fillets, reserve the marinade. Heat the oil in a pan and brown the meat on all sides. Place the fillet into a roasting tin with the oil and marinade, season and roast for 35 mins, basting frequently. When cooked cut into 1 inch thick sliced and serve with lemon slices and sautéed onions. (serves 6).
