Turkey & Cranberry Meatloaf

650g cooked turkey mince or finely chopped turkey.
1 small onion finely chopped or grated.
2 sticks of celery finely chopped
100g sage & onion stuffing
100g dried cranberries
2 eggs
Few drops of milk
3 tbsp cranberry jelly/ sauce.

Serves: 6
Preparation Time: 10 mins
Cooking Time: 1 hour


Preheat the oven to 180C. Line a 2lb loaf tin with grease proof paper.

Mix all the ingredients together, except the cranberry jelly, and press mixture into the loaf tin.

Melt the cranberry jelly in a pan or the microwave until it becomes liquid, then pour the glaze onto the top of the meatloaf.

Bake in the oven for approx 1 hour until fully cooked through.
